True to Piotr's assessment of him, Kaidan doesn't stop his work just because he's gotten an answer. He does dip his head in return for the nod in a way that suggests he does in fact know how to give a proper salute, and likely would if they weren't both off duty in the stables.

After that, being in the service... well, I've probably seen more large alien animals than ones from Earth. At this point, I'd be a fan of horses for the fact that they don't spit acid at you alone."

Horses, with a shared fondness for calm and quiet, not to mention their use as biological ATVs, are unexpectedly interesting. (He has yet, it's to be noted, actually be up on one.)
